Foursquare Private Cask Selection Elysium

Elysium is a Foursquare Private Cask Selection, drawn from Richard Seale's additive-free St Philip distillery and built on the house pot and column blend. A 12 Year Old single blended rum bottled at a full 60%, it sits close in spirit to the distillery's numbered ECS bottlings, dry, intense and sherry-finished.

The pot-and-column makeup gives the balanced Foursquare backbone, cleaner column spirit rounded by richer double-retort pot still, while a sherry cask layers dried fruit and chocolate over the house markers. The aroma carries wood, vanilla, dried fruit and chocolate, the palate brings coconut, vanilla and raisin against firm oak, and the finish stays on chocolate, roasted wood and dried fruit. Unsweetened and powerful, with the sherry adding richness rather than sugar, it works best as an after-dinner sipper or over a little ice for drinkers who enjoy dry, full-strength Barbados rum.
