Fortaleza is the traditionalist reference for old-style Valles tequila, made by Guillermo Erickson Sauza in the town of Tequila from Blue Weber agave grown in the Jalisco lowlands. This reposado is one of the few credibly documented tahona pressed tequilas left, every numbered bottle the product of a slow and labour intensive process. It is 100% agave, additive-free, and rested anywhere from two to seven months depending on the batch number.
The agave is baked in a brick and stone oven, then crushed under a stone tahona wheel so the fibre ferments alongside the juice in open wooden tanks on natural yeast. Double distillation in copper pots gives a viscous, oily spirit. Expect cooked agave, citrus, butter and sage up front, moving into vanilla, apple, earth and a gentle cinnamon spice, with a long, faintly oily finish that carries the lowland character of its source.
