Description
This official Edradour, a 12 year old, from 2009, cask 154, at 57.9%, 631 bottles in all. Edradour is a small, traditional Highland single malt, owned by Signatory since 2002. It keeps the old ways, with an open cast iron mash tun, Oregon pine washbacks and worm tub condensers.
It was worked through Oregon pine washbacks and tiny stills for a rich, oily spirit, giving the full bodied, creamy Highland spirit. Maturation came in an Oloroso cask, layered over the rich Edradour make. By the integrating teens congeners fade and esters build, the rich, oily spirit growing creamier. Long ageing turns the rich make towards dried fruit, fig and a soft spice. Maturation in the dunnage warehouses at Pitlochry is slow and steady. Vanillin and oak lactones from the wood lend vanilla and coconut over the fruit. It once supplied blends such as House of Lords and King's Ransom.
At its natural 57.9% it is rich and full bodied. Chocolate, dried fruit and a waxy oil, with dried fruit, fig and walnut from the cask. A baked apple and a gentle spice lift it. It finishes long, rich and oily. This is Edradour's full bodied, sherried Highland style.
