Description
This official Edradour, a 12 year old, from 2008, cask 35, at 57.8%, 712 bottles in all. Edradour is a full bodied, oily Highland malt made on Ben Vrackie water at Pitlochry. Under Signatory the range has grown to a wide run of sherry and wine cask bottlings.
Worked through Oregon pine washbacks and tiny stills for a rich, oily spirit, giving the full bodied, creamy Highland spirit. An Oloroso cask held it, shaping the oily spirit over the years. By the integrating teens congeners fade and esters build, the rich, oily spirit growing creamier. Active wood frames the rich fruit without overwhelming the oily Highland spirit. Long ageing turns the rich make towards dried fruit, fig and a soft spice. Refill oak lets the rich, oily Edradour character lead the way. It keeps the old ways, with an open cast iron mash tun, Oregon pine washbacks and worm tub condensers.
At a natural 57.8% it is full and oily. A rich, nutty sweetness, with dried fruit, fig and walnut from the cask. A dried fruit and a polished oak give it depth. A long, nutty finish carries dried fruit and a soft spice. This is the oily, rich malt of tiny Edradour.
