Dos Maderas Seleccion is built by Bodegas Williams and Humbert, a sherry house in Jerez, from Caribbean column still molasses rum shipped to Spain for extended ageing and a finishing period in sherry casks. The sherry influence is the whole point of the style, layering dried fruit and oxidative notes over the rum.
This is a sweet rum, and the copy will not pretend otherwise: it pours raisins, figs, caramel, vanilla and cocoa in a soft, almost syrupy body, with sherry and a touch of liquorice on the finish. At 42% it is gentle and easy, a dessert in a glass rather than a dry sipper, and drinkers who prefer their rum bone dry will likely find the sweetness dominant. For anyone with a sweet tooth, or who enjoys sherried after dinner pours, it is an affordable and undemanding treat best taken neat and slow.
