Description
Recipe No. 23 comes from Liviko in Estonia, a distillery happy to wander off the well-trodden London Dry path. It keeps the traditional backbone of juniper, coriander seed and lemon peel, then adds heather and fennel for depth and a character that feels rooted in northern moorland. Distilled in copper pot stills, it stays clear, dry and complex without losing its classical poise.
The nose is fresh juniper with citrus and a subtle floral hint; the palate is dry and aromatic, the heather and fennel lending a soft herbal spice that runs into a long, lemon-zested finish. It makes a fine Indian-tonic G&T with a sprig of rosemary, and holds its own in a Negroni or Dry Martini.
