Copalli is a Belize distillery making rum from fresh-pressed sugar cane juice, which places it agricole-style rather than under the French AOC. This white is unaged, distilled on a combination of pot and column stills, and bottled at a gentle 42%.
The profile is light and clean, with sugarcane, grass and a vegetal core meeting tropical fruit, lychee and a faintly sappy, earthy finish. There is very little alcoholic burn, which makes it easy to drink but also keeps it on the gentler, simpler side of cane juice rum. It leans toward easy sipping and cocktails rather than deep contemplation, a comfortable way into the grassy cane style for drinkers wary of high-proof intensity.
