Description
CDI South Pacific (Bottled for Denmark) 2004 is an 11 year Fijian rum from the South Pacific Distillery, selected by the terroir-led French bottler Compagnie des Indes and drawn from a single 2004 cask at a full 66.8%. It is an unsweetened, natural-strength release that puts the distinctive Fijian profile front and centre, bottled for the Danish market.
Aged in ex-bourbon oak, it shows caramel, wood, vanilla and leather on the nose, with a creamy, lightly salted palate carrying turmeric, cinnamon and a touch of molasses. At cask strength the alcohol is assertive and the spirit can read sharp and varnish-edged when neat, so this is one to open up with a little water, at which point mocha and herbal Fijian character emerge. A bold, characterful single cask for drinkers who like their rum raw and unsweetened.
