This is a Panamanian single-origin ron selected by Compagnie des Indes, the French bottler known for terroir-led, naturally presented releases. Distilled from molasses on a column still in the soft Panamanian manner and aged a little over seven years in ex-bourbon wood, it is listed unsweetened, true to the house's purist leanings.
The profile is more savoury and characterful than the typical mellow Panama pour. Aromas of raisin, pecan and a curious smoky bacon note lead into a palate of sherry, mocha, cardamom and that same cured-meat thread, with raisin, dark chocolate and baking spices on a finish that shows the effect of bottling at a sippable 43%. CDI's natural approach lets the spirit and cask speak without sugar to smooth the edges, giving an honest, slightly offbeat take on aged Panamanian rum.
