Description
Bologne in Guadeloupe ages its well known white made entirely from canne noire, black cane, to create this Old Black Cane, an agricole from fresh sugarcane juice under the island's IGP. Around three years in wood at a comfortable 45 percent, it is built for soft, dessert-like drinking rather than raw cane intensity.
Matured in ex-bourbon wood, with distillation in the house style of a low-proof creole still, it leans smooth and balanced: vanilla, brown sugar and cocoa lead, with gentle tropical fruit and a sugarcane core beneath soft French oak. The palate stays rounded with vanilla, brown sugar and burnt sugar, finishing woody and lightly peppery. The chocolate and gourmand notes sit a little ahead of the green, herbal agricole side here. An easy, harmonious sipper neat or with a splash of water.
