Description
Bayou is a Louisiana distillery, and this Spiced Rum is its flavoured, sweetened expression, built on a pot still molasses base and bottled at 40 percent. It is openly a spiced rum rather than a dry aged one, aimed at cocktails, baking and easy drinking rather than neat contemplation.
The pot still base carries some body, but the spicing and sweetness lead, with a nose of vanilla, baking spice and caramelised sugar, then a palate of vanilla, dried apricot, clove and a syrupy texture before a sweet finish of vanilla, cinnamon and warm baking spice with a faint herbal, chili lift. There is a strong foam banana candy character running through it. Honest about what it is, it works best as a mixer in spiced rum cocktails or steeped into baking, where its sweet, candied spice does exactly what is asked.
