Description
Animas Espadín Joven is an artesanal mezcal distilled in Santiago Matatlán in the southeast of Oaxaca, the heartland of the category and the old territory of the Zapotec culture. Espadín is the most widely used agave in mezcal, but the town and the hand made route here give this bottling its own balanced character.
Everything is done by hand: the agave is planted and harvested manually, cooked in hand fired and controlled earth ovens, crushed with an old fashioned tahona, then fermented and distilled by hand. That earth oven roast and stone crush show in the glass as agave and grass with sweet hints of agave honey and pineapple syrup, lifted by smoke on the nose. The palate is soft and round with the vegetal, herbal notes typical of agave and a subtle, well integrated smoke. Bottled at 45%.
