    An Dulaman is the first gin distilled in County Donegal, made by Sliabh Liag Distillers and named for an old Irish folk song about two seaweed gatherers in conversation. Fittingly, its character rests on five locally harvested seaweed varieties alongside six other carefully chosen botanicals, capturing the essence of the wild Irish coast. Each bottle is sealed with wax, and the batch numbers are tied to the phases of the moon, a small ritual that marks every run as its own.

    The nose is pure sea breeze, with clear notes of seaweed. The palate is complex and properly salty, soft juniper opening onto buttery oyster, a hint of chestnut and a savoury, tannic grip, then a long finish. This is a gin for a coastal Martini, stirred cold and served with no garnish but the salinity itself, or a G&T with a squeeze of lemon to sharpen the maritime edge.
