This South Pacific 2004 is an Albert Michler Distillery bottling, a single cask of Fijian rum drawn from one ex bourbon barrel and carrying roughly sixteen years of maturation at 52%. Distilled on both pot and column stills from molasses, it captures the distinctive Fijian balance of fruit, florals and a smoky, maritime edge.
The nose is fruity and complex, smoky wood and vanilla threaded with chocolate and a floral hint. The palate stays woody and roasted with fruity depth and a peppery spice, while the finish carries wood, spice, smoke and dried fruit. The cask selection is clearly considered, the spirit fresh and lively with a touch of mint and florals balancing the oak.
