Impavid is an Italian vodka that swaps the usual grain or potato base for distilled wine, with the source fields also noting potato in the makeup, giving it a fuller body underneath the grape lift. Distilling from wine is what sets it apart: grape spirit carries a natural fruitiness, and Impavid is run through several distillations in small batches to clean it up while keeping some of that varietal character intact. At 40%, the result is velvety and rounded rather than sharp, with a faint sweetness that grain vodkas rarely show.
