Baileys created the cream liqueur category in 1974, marrying Irish whiskey with fresh dairy cream in a stable emulsion, and it remains the original and best selling name in its class. This limited edition keeps the characteristic Irish cream base and layers in delicate white chocolate and fruity raspberry, bottled at 17% for a dessert led variation.
The nose is sweet white chocolate, fresh raspberry and creamy notes, the palate very creamy with white chocolate, fruity raspberry and a balanced sweetness, the finish smooth, round and long lasting. Behind the bar it is a dessert and body ingredient, adding dairy richness, a fruity chocolate sweetness and weight to a sweet Martini riff, a layered serve or a creamy long drink, and it stands in for cream where a fruit forward note is wanted. It pours neat over ice, where the creamy texture and fruity chocolate show best, and sits beside berry desserts, cheesecake or white chocolate. As a dairy product it should be kept cool once opened and used within a few months.
