Description
La Gritona Reposado is a Jalisco tequila distilled by Melly Barajas and her team of local women at the small Razazteca distillery in Valle de Guadalupe, registered as NOM 1533, with every step from agave to bottle handled under one roof. The agave is grown nine to ten years in the iron-rich red highland soil and harvested at the peak of its sugar, at the end of its life cycle.
The pinas are steam cooked for 24 hours in two thick-walled earthen ovens, rested another day, then pressed, with the juice fermented naturally in open steel tanks at the pace the local air temperature sets, and distilled twice. The spirit rests eight months in used American whiskey casks before filtering and bottling. The profile is deliberately spare, fresh and vegetal agave with a round, mild finish and none of the vanilla, chocolate or pepper of a sweeter style. The bottles are hand blown from recycled Mexican glass. This is a 50 ml sample.
