Description
Santo Pecado is a bacanora from the Sierra de Sonora, made from Agave Pacifica, the local strain of Agave angustifolia that is the only species permitted in this northern spirit. It is produced by maestro distiller Rumaldo Flores Amarillas, with the agave grown in the rich red clay of northwest Mexico and hand harvested. Bacanora was illegal in Sonora until 1992 and holds its Denomination of Origin from 2000, so production remains small and rustic.
The hearts are roasted in an underground stone oven over encino and mesquite wood, milled by hand and machine, fermented six to twelve days with well water, then twice distilled in copper stills and bottled at strength. The spirit is crystal clear with medium viscosity. The nose is rich and earthy with citrus, pear and a wisp of vanilla, while the palate runs dry and complex, lightly smoky with straw and pepper over an earthy finish, at 45%.
