Description
Aguamiel Bacanora Blanco is a Sonoran agave spirit made from Maguey Pacifica, the northern name for Agave angustifolia, the same species as Espadin grown in the desert state of Sonora. It is produced in Suaqui Grande by one of the few registered bacanora brands available internationally. Bacanora was banned in Sonora for 77 years until 1992 and carries its Denomination of Origin from 2000, with production still small and largely done by hand.
The agave hearts are pit roasted before crushing, a step that concentrates the flavour and gives the spirit its smoky character, then twice distilled to a smooth result. The first impression is earthy and smoky, followed by a light touch of anise and mesquite. On the palate its strong personality comes through alongside anise and fruit, and it closes on a sweetness that holds for several minutes. Bottled unaged at 41%, it shows the dry desert profile of Sonora.
