Description
Yoowe is a bacanora from Sonora in northwest Mexico, the desert state where this spirit was outlawed from 1915 until 1992 and made clandestinely in the mountains for nearly eight decades. It is distilled from the Pacifica maguey, a northern strain of Agave angustifolia, the same species behind Espadin but shaped by the dry Sonoran terroir. Bacanora carries its own Denomination of Origin, granted in 2000.
The Pacifica hearts give a profile that runs floral and intensely mineral, with a faint lactic edge from open fermentation. On the palate it turns herbal and savoury, with spiced mint, fennel seed and peppermint over a jalapeno warmth, closing dry and saline like a sea breeze. Bottled unaged at 47.5%, it keeps the agave and the desert character undiluted.
