Gracias a Dios Agave Gin

Gracias a Dios Agave Gin is a gin built on a mezcal base rather than a grain spirit, conceived as a nod to the botanical variety of Oaxaca. The foundation is Gracias a Dios mezcal made from Espadin, the same Agave angustifolia that underpins most of the house range, produced at its Santiago Matatlan palenque before the spirit is taken in a new direction.
The defining step is a third distillation, during which a set of botanicals is added to the still, juniper alongside Oaxacan ingredients such as avocado leaf, yerba santa, cacao and local mandarin. Juniper leads on the nose, balanced by avocado leaf and yerba santa with agave sweetness underneath, while the palate shows minerality, herbs and spice, lavender, liquorice, juniper berry and a thread of smoke from the mezcal heart. Bottled at 45 percent.
