Description
Cenote Green is an orange liqueur built on a Blanco tequila base from Jalisco, made entirely from Blue Weber agave. The agave hearts are cooked slowly in traditional ovens, the pressed juice ferments with well water drawn from the foot of the Jalisco volcano, and the mosto is twice distilled in copper to a clear Blanco. At 40 percent it sits well above the strength of typical orange liqueurs, which keeps the sugar in check and the citrus sharp.
The flavouring comes from fresh green orange peels from Veracruz, steeped in alcohol to release their essential oils and then redistilled a third time so the fruit aroma sits firmly in the spirit. The result reads bright and fruity on the nose, with cut green orange and lively citrus over the sweetness of cooked agave. The palate is refreshing and pleasantly bitter, the green peel balancing the sugar with a subtle thread of wood spice.
