    Bozal Sacrificio is a pechuga mezcal built on wild Cupreata, the Guerrero agave also called Papalote, from a brand that sources wild magueyes across the steep hillsides of Oaxaca and Guerrero. Pechuga is a third distillation, a seasonal tradition made in small amounts for local celebrations near year end, which keeps batches irregular and finite.

    The agave is crushed on a bull driven tahona stone wheel, baked in earthen ovens, fermented and distilled, then run again with a lamb leg suspended in a basket at the base of the still alongside seasonal wild fruit such as strawberry, apple and pineapple plus pecan and ginger. The meat lends nothing meaty, it rounds the spirit while the fruit and spice lift it. Expect a softened smoke with warm spice, clove, citrus and wildflowers, a rich viscous body of roasted and ripe fruit, gentle minerality, cinnamon and earthy agave, and a long, warming, dry finish with savoury umami and quiet sweetness. Bottled at 47%.
