Mezcal Amaras Logia Cenizo comes from the Logia line, made not in Oaxaca but in the hills of Nombre de Dios in Durango, from wild Cenizo, the Agave durangensis that here reaches up to fourteen years and enormous size on the rocky, oak covered slopes. Bottled as a joven at 43%, it shows the fruity, faintly creamy character of northern Cenizo country. The Logia range has since been retired in favour of the Reserva Especial line.
The agave is roasted with local mesquite and huizache wood, which lends its smoky, savoury edge, then milled by axe in the old way, a labour that takes five times as long and demands twenty to twenty five kilos of agave for a single litre. Fermentation is natural, in rectangular tanks buried in the ground to steady the spirit through Durango's extreme climate. The nose gives fine citrus over earthy, smoky notes, the palate turns to bold roasted coffee, and the finish carries wood and a sweet trace of raisin.
