Los Danzantes Mezcal Espadin Joven Still proof

Los Danzantes Joven Still Proof is a mezcal from Santiago Matatlan in Oaxaca, made from 100% Espadin and bottled at its natural distillation strength of 53.3% with no water added afterward. It is a distinctive release for the house, captured at full proof so the agave and terroir arrive undiluted.
The agave is cooked in an underground stone oven, crushed with a traditional horse-drawn tahona and fermented with wild yeast before double distillation in small copper stills. The spirit then rests for a year in 20 litre glass demijohns for aromatic stabilisation, a glass-aged step that integrates the spirit without adding wood. It pours clear, with strong tropical fruit, pepper, mint and baked agave on the nose and an intense, concentrated palate of lime and grapefruit, black pepper, pineapple and agave.
