Description
Yuu Baal Espadin Pechuga is an Oaxacan mezcal from San Juan del Rio in the Tlacolula district, made by maestro mezcalero Isalas Martinez Juan from Espadin that takes around seven years to mature. The name joins the Zapotec words for earth and fire, and this bottling follows the pechuga tradition, a distillation enriched with turkey breast and seasonal fruit suspended in the still.
The piñas are cooked in a concave stone oven, crushed on a tahona and fermented naturally in pinewood vats, then double distilled with the addition of turkey breast and fruit, which round and lift the spirit rather than make it savoury. Bottled unaged at 40%, it opens with orange, anise, pineapple and mango, carries a strong yet velvety palate, and finishes on turkey breast, cinnamon, rice and mango in a long, aromatic close.
