Description
Don Fernando is a traditional reposado in the old school mould, a tequila rested six months in oak. The house ages in small barrels, which speeds the exchange of colour and flavour over that relatively short rest, giving the spirit its characteristic light golden hue and gentle notes of oak and honey while the agave stays clearly in view.
Production follows classic steps: the jimador strips the pencas and lifts the heavy pinas, which are cooked up to forty eight hours in brick hornos, then crushed and pressed to separate juice from fibre. Fermentation runs on a family recipe with fully natural yeast and no chemical accelerants. The barrel lends firm vanilla and almond, while herbal agave structures a defined, intense palate where the agave reads well present through the finish.
