Pasote is a Los Altos tequila brand best known for its El Pandillo origins under Felipe Camarena, but this bottling carries NOM 1584 and was made at a different distillery in San Julian, Jalisco, in the highlands, so its character differs from the original El Pandillo releases. It is a blanco built around Agave tequilana Weber var. azul, bottled unaged at 40% to keep the agave and highland fruit in the foreground.
The nose shows ripe roasted agave with herbal depth and scents of fresh herbs and citrus. The palate is clean and bright, with spicy concentrated agave balanced by crisp, juicy pineapple through the mid palate, in the fruitier, rounder register typical of highland tequila. With the change of distillery the profile leans green and fruit forward rather than mineral.
