Volans Tequila Reposado

Volans Reposado is a 100% Blue Weber tequila produced at NOM 1579, the El Pandillo distillery in Jesús María run by Felipe Camarena, the fourth generation distiller behind G4 and Pasote. Built on estate highland agave and the additive-free, no diffuser approach El Pandillo is known for, it rests in oak past the two month reposado minimum while keeping the agave in clear view, bottled at 40%.
El Pandillo cooks in stone ovens, crushes on a homemade mechanical tahona and distils in copper, cutting with a blend of rainwater and spring water. The nose is fruity and earthy with vanilla, cinnamon, clove, fresh pear, light caramel and a mineral edge. The palate is rich and buttery, a cooked agave honey note threaded with minerality, stone fruit and black pepper, with light coffee and oak, closing on a sweet, peppery finish.
