Volans Tequila Blanco

Volans is a 100% Blue Weber blanco tequila produced at NOM 1579, the El Pandillo distillery in Jesús María run by Felipe Camarena, the fourth generation distiller behind G4 and Pasote. The brand draws on estate highland agave and the additive-free, no diffuser and no column approach for which El Pandillo is a reference, released in small high-proof batches and here bottled at 40%.
El Pandillo cooks in stone ovens, crushes with a homemade mechanical tahona and distils in copper pot stills, with a signature blend of harvested rainwater and spring water cutting the spirit. The nose is dominated by cooked agave, a hallmark of Volans, with a fresh note and a touch of pepper. The palate reads as buttery and rich with a pleasant pepper-driven heat carrying through, a clean and mineral highland blanco.
