Description
Calle 23 is the work of Sophie Decobecq, a French biochemist whose signature is her own cultured yeast strains, made at NOM 1545 in San José de Gracia. This Edición Única 2023 is a limited blanco from agave azul, the only species tequila allows, released for the brand's twentieth anniversary in a run of 7900 bottles. Calle 23 is producer additive-free.
Unusually it is a blend of three components: agave from Los Altos de Jalisco as in the core range, agave from the Valle de Jalisco near the town of Tequila, and a third part from the state of Guanajuato within the denomination of origin. Yeast-driven fermentation and clean distillation give a precise, citrus forward profile, cooked and green agave with white pepper and a herbal edge, the highland fruit rounding the drier valley character. Bottled at 40%.
