Description
El Mayor Tequila Añejo Cristalino is a 100% Blue Weber tequila produced at Destiladora González Lux, NOM 1603, in Arandas in the southern Los Altos highlands of Jalisco. It is an añejo aged at least twelve months in American white oak and then filtered through ultrafine charcoal to strip the colour back to clear, so it carries barrel sweetness while looking like a blanco. It is bottled at 40%, higher than many cristalinos.
The agave is cooked in low-pressure autoclaves, milled on a roller mill and fermented in stainless steel without fibre, then twice distilled in a stainless pot with a copper coil. The result leads with cooked agave, oak and vanilla over complex fruity and herbal undertones, the palate emphasising dried fruit and vanilla, with a fresh finish of herbs and citrus. Charcoal filtration softens the oak grip that aging would otherwise leave.
