Clase Azul Ultra is the top expression in the Clase Azul range, a 100% Blue Weber Extra Añejo produced at NOM 1416, the Productos Finos de Agave facility in Jesús María in the Los Altos highlands of Jalisco. From field to bottle the journey runs close to fourteen years, and the agave is brick oven cooked. The hand painted ceramic decanter, finished in platinum, silver and 24 karat gold by skilled painters and topped with a sterling silver agave medallion, is a defining part of the bottle.
The spirit rests five years, first in American ex whiskey casks then in Spanish ex sherry casks, which lend its dark amber colour and dried fruit lift. The nose carries sherry, dried plum, apricot and cherry with maple sirup, hazelnut and intense oak, and the palate follows with dried plum, cinnamon, caramel cream, vanilla and crystallised ginger. The long sherry aging makes this oak and dried fruit forward, with the agave well in the background, and the house style runs notably sweet.
