Arette Artesanal Suave Anejo is the senior line from the Orendain family's Arette, a 100% agave tequila made at the El Llano distillery, NOM 1109, in the lowlands around the town of Tequila. The Artesanal Suave range is a distiller's cut, drawn from the best of the run, and the Orendain master distillers represent the fifth generation of the family.
The defining difference is the cook: the agave is baked in a traditional stone horno rather than faster autoclaves, a slower, gentler process that brings forward the more delicate agave notes. Fermentation runs an unusually long four days, distillation is twice in pot stills, and the distillery uses spring water from the Tequila volcano. After 20 months in oak the tequila carries cooked agave underneath vanilla and soft baking spice, rounded and bottled additive-free at 38%.
