    Siembra Valles Blanco Ancestral 2023 is a 100% Blue Weber tequila made at Cascahuin, NOM 1123, under David Suro and the Rosales family, and billed as the first certified tequila produced entirely by techniques from the nineteenth century. Ancestral is a term borrowed from mezcal for its oldest and most labour intensive methods, which is why this bottle is genuinely unusual within the tequila world. It is additive-free and bottled at a full 51%.
    Unlike the usual brick oven or autoclave, the agave here is roasted in an earthen pit, which lends a gentle smoke uncommon in tequila alongside its cooked sweetness. The aroma opens on orange blossom and warm roasted agave, while the palate is silky with herbal tones, sweet cooked agave, pine and a faint smokiness, lifted by the citrus that runs through Cascahuin's spirits. The finish blends sweet, earthy and herbal depth.
