Clase Azul Añejo Mazahua Edition is a 100% Blue Weber añejo made in the highlands of Jalisco and presented in the brand's hand finished ceramic decanter, the centrepiece of its identity. Añejo requires at least a year in oak under 600 litres; this spirit rests roughly twenty five months in a mix of bourbon, cognac and sherry casks, so the wood becomes a co lead with the agave.
Clase Azul agave is cooked in brick ovens before the long, multi cask maturation that shapes the glass. The combination of barrel types reads in the layered profile: toffee, cinnamon, clove, roasted hazelnut, vanilla and orange marmalade on the nose, then nutmeg, more marmalade and toasted oak over a silky body. The house style runs distinctly sweet and rounded, with the agave moving to the mid palate. Bottled at 40%.
