Description
El Mayor Añejo is a 100% Blue Weber tequila from Destiladora González Lux in Arandas, in the southern reaches of Los Altos, the iron rich highland plateau of Jalisco. The González family built this añejo around long maturation, 18 to 36 months in white oak, aiming for a rounded, contemplative sipper that softens the agave rather than pushing it toward whisky weight.
The agaves are cooked by a slow low pressure method that takes a day or two rather than the few hours of a high pressure autoclave, which the house credits for the line's gentle, mild character. Juice from a roller mill ferments in stainless tanks with the fibre removed, then runs twice through stainless pot stills fitted with copper coils. The result is amber, with caramel and sweet baked fruit on the nose and a palate of caramel, grilled tropical fruit and brown spice closing on warming, lightly sweet agave at 40%.
