    Calle 23 Tequila Blanco is a Blue Weber agave Blanco produced at NOM 1545 in San José de Gracia in the Los Altos highlands of Jalisco. It is the work of French biochemist Sophie Decobecq, whose signature is the use of proprietary cultured yeast strains and careful fermentation. The agave used here is harvested at seven to ten years of maturity and the tequila is made without large batch shortcuts.
    Unaged and additive free by the producer, it is a modern, restrained Blanco that keeps the agave gentle rather than loud. The nose is soft, with fresh cooked agave, traces of cinnamon, mountain herbs and a little liquorice. The palate is balanced and mild, carrying an underlying sweetness, light herbs and liquorice over a discreet agave note. Bottled at 40%, it is a precise highland Blanco shaped by its yeast work.
