Description
Fortaleza Blanco is a traditionalist Valles tequila from the Sauza family lineage, made at Destileria La Fortaleza in the town of Tequila from lowland Jalisco agave, NOM 1493. It is one of the few houses still crushing its cooked agave entirely with a stone tahona, a slow, labour heavy method that leaves each numbered bottle distinct.
The agave is baked in a brick and stone oven, crushed by tahona, fermented in open air wooden tanks with natural yeast and twice distilled in copper, with no additives. Bottled at 40% as 100% agave, it fills the nose with citrus and rich cooked agave, alongside butter, olive, earth, black pepper and a deep vegetal complexity. The palate echoes citrus, cooked agave, vanilla, basil, olive and lime, the finish long, deep and complex yet easy to drink. A reference for old style lowland tequila.
