Cooked agave, vanilla and toffee caramel ride a soft woody, fruity body in this reposado from Clase Azul, slow baked in stone ovens and rested eight months across bourbon, cognac and sherry casks at 40%.
Description
Clase Azul Reposado is made at Productos Finos de Agave under NOM 1416 in Jesus Maria, Los Altos, from Blue Weber agave slowly cooked in traditional stone ovens for at least seventy two hours before fermentation with the house yeast. The hand painted ceramic decanter is central to the brand, and the profile sits firmly at the sweet, vanilla and toffee leaning end of the highland spectrum.
After distillation the tequila rests eight months in a selection of hand chosen oak barrels that previously held bourbon, cognac and sherry, a mixed cask programme that builds its soft, rounded character. The colour is a deep amber, with woody, fruity aromas alongside vanilla and toffee caramel. The palate echoes that with cooked agave, a woody and fruity sweetness and a notably soft texture. Clase Azul does not hold additive-free verification, so this reads as a deliberately polished, sweet style.
