CASASTOS Spirits build their Old Tom range in Austria around a single idea: let real fruit do the talking over a classic juniper frame. This pomegranate edition is bottled in small batches with a roster of woody juniper, coriander, elderflower and blackberry leaves, then loaded with strawberries, raspberries and the star ingredient, fresh pomegranate. The faint reddish glint in the glass hints at the orchard of fruit inside, while the gentle Old Tom sweetening keeps everything balanced rather than sharp.

The nose opens on pomegranate seeds, strawberry and a floral lift, with juniper sitting quietly underneath. On the palate it is fruity and softly sweet, the tart pomegranate and red berries carried by coriander and a woody juniper spice. The finish is long, delicately spiced and harmonious.
