Purity 34 Craft Nordic Old Tom Organic Gin

Purity's distillery in southern Sweden treats gin almost as a precision craft, running its spirit through an extraordinary thirty-four distillations. This Old Tom revives the lightly sweetened style that ruled London in the eighteenth century, but rebuilds it on organic Swedish wheat and malted barley grown without chemical intervention. The botanical bill leans Nordic, with basil, thyme, lavender and local berries giving it a fresh, herbal complexity. It is vegan and gluten-free into the bargain.

The nose opens on juniper, fresh basil and thyme, with lavender and berry drifting through. The palate is soft and round, gentle sweetness wrapped in herbs and floral accents, a subtle fruitiness from the Nordic berries running underneath. It finishes long and balanced, spicy and floral at once. It is made for a classic Tom Collins, but works just as happily over a single large ice cube.
