Description
Silent Pool distil beside the spring-fed pool that gives them their name in Surrey, with a real streak of stubbornness about sourcing regional ingredients and partners they trust. Their gin draws on a wide botanical range, kaffir lime, chamomile, lavender, juniper, lemon, pepper, aniseed, mint and local honey among them, and is run on a restored wood-fired steam boiler driving a hand-built Holstein copper still.
The nose is all lavender and chamomile over juniper. The palate is gentle and dry, juniper carrying a light honeyed sweetness and bright citrus, before a long, dry finish. That floral softness makes it a lovely G&T poured with a light tonic and a sprig of chamomile or a twist of lemon, though it also brings perfume to a fragrant Martini.
