Description
Toison carries its Slovakian roots in every detail: the name and the sheepskin on the label recall the legend of a shepherd who, searching for lost sheep, stumbled on the thermal springs of Trencianske Teplice, while the bottle is shaped like a bell. The gin is distilled in a Holstein column by the steeping method, then rested for a month in earthenware vessels, an unusual step that rounds the flavour and lends it depth.
The nose is gentle and floral, chamomile leading into linden and elderflower. The palate shifts to spice, pink pepper and juniper sharpened by rosehip and a flicker of strawberry, before a long finish of liquorice and bright citrus. Serve it in a gin and tonic with a light tonic and a twist of lemon to let those floral notes carry.
