Description
The Maschio family have distilled in San Pietro di Feletto since the mid-nineteenth century, and under Beniamino Maschio they took over Distilleria dell'Alpe in 2002 to make gins in the Venetian tradition. For this Old Tom the juniper is rested at room temperature for fifteen days before distillation even begins, the spirit run through copper stills that date back to the Second World War. The botanical list runs long, from bay, chamomile and cardamom to caraway, gentian, lavender, hops, mint, pine and rosemary.
The nose is intense, fruit and juniper carried alongside rosemary, mint, pine and lemon. The palate is harmonious and elegant in the rounded Old Tom way, with bay, chamomile, caraway and bitter gentian playing under the juniper. It finishes long. Sip it neat to follow its herbal turns, or build a softer, sweeter Tom Collins where its gentler edges shine.
