    Hayman's has been making gin in the classic British style for over 150 years, and Gently Rested is its tribute to gin's older, barrel-touched traditions. It begins as a proper London Dry, distilled the traditional way, then rests for three weeks in old whisky and bourbon barrels. That brief stint in wood softens the sharp edge of the juniper and adds a layer of complexity, without ever burying the classic gin character beneath the oak.

    The nose is mild juniper with hints of citrus, fine spice and a gentle woody nuance. The palate is soft and balanced, classic juniper joined by a subtle vanilla sweetness, light spice and the quiet note of matured wood, all carried to a smooth, long and elegant finish where juniper and oak sit in harmony. Try it in a Martinez, or in a G&T with Indian tonic and a curl of orange zest to lift the wood.
