Papa Salt is the work of five friends who wanted a gin to match the easy rhythm of the Australian coast, actress Margot Robbie included. Distilled in small batches, it reaches for native lemon myrtle, coriander, ginger, juniper and angelica root, then folds in Australian sea salt to capture the briny snap of maritime air. At 42.8% it sits balanced and smooth rather than fierce.
The nose is fresh and invigorating, all lemon and juniper over a whiff of salty sea air and herbs. The palate is light and soft, citrus and floral freshness threaded with subtle spice and that pleasant saline note humming in the background, before a long, finely mineral finish. It loves oysters and prawns; pour it over plenty of ice with a good tonic and a twist of lemon.
