Uncle Val’s Restorative Gin

Like the rest of Uncle Val's range, the Restorative leans on Zio Valerio's Tuscan gardening obsession, the botanicals chosen as much for the plot as the still. Here the recipe steps away from the brand's spicier side towards something greener and gentler: juniper berries, cucumber, lavender and sage reworking the classic American profile while keeping one foot in tradition. The effect is calm and aromatic rather than punchy.

The nose is floral and faintly sweet, with rose lifting above the herbs. The palate runs delicately tart, citrus brightening notes of coriander, cool cucumber and rose petal, before a long finish that stays herbal and soft. Serve it tall with tonic, a ribbon of cucumber and a sprig of lavender for a garden-fresh G&T.
