Edinburgh Gin Raspberry Liqueur dates to 2011, when the distillery became one of the first to fold natural fruit into gin liqueur and help kick off the modern fruit-liqueur wave. Fully ripe raspberries, drawn from Scottish growing regions and beyond, are infused into the house gin, so the spirit's juniper backbone never quite disappears beneath the berries. At 20% it sits light and approachable, dressed in a vivid raspberry-red.
The nose is all fresh raspberry, with a delicate juniper note and gentle sweetness behind it. The palate is fruity and mild, ripe berries balanced by a subtle acidity and a flick of gin spice, leading to a soft, long, sweetly fruity finish. Pour it over ice and top with Prosecco or tonic, trickle it over ice cream, or pair it with cheesecake and summer berries.
