    Edinburgh Seaside Gin is the distillery's tribute to Scotland's coastline, built around botanicals gathered from the shore. Bladderwrack, sea fennel and bog myrtle bring a gentle saltiness and a herbal, mineral depth, while juniper, coriander and citrus peel keep the spirit recognisably a gin. The result reads like the coast itself: fresh, slightly briny and grounded in the place it comes from, distilled with the elegance of a classic London Dry.

    The nose carries fresh juniper over a light sea breeze, fine herbs and citrus accents. The palate is soft and balanced, salty and faintly mineral with seaweed, gentle herbs and a subtle sweetness, and the finish is fresh, dry and lastingly maritime. Reach for a light Mediterranean tonic and garnish with fresh herbs or lemon zest, and pour it alongside oysters or sushi where its salinity comes into its own.
